Week Night Cooking: Pork Medallions

I love finding a recipe that is not only delicious, filling, inexpensive, and healthy,  but quick and easy too! Especially for a week night dinner. After working all day, playing outside or walking Shugar, odd and end chores around the house, the last thing I want to do is spend hours cooking dinner. I found this recipe in Cooking Light magazine. I've made it several times and the best part is there are only a few ingredients and some you probably already have at home! Enjoy!

Crispy Pork Medallions
serves 3-4

1 (1lb)  pork tenderloin*, cut into medallions (about 8-10)
2 tbsp dijon mustard
1/2 cup panko crumbs
1 tsp fresh thyme**
1 tbsp fresh parsley**
1/8 tsp salt
1/8 tsp ground black pepper
2 tbsp extra virgin olive oil
*Can use a turkey tenderloin as well
**I used dried herbs because I already had them at home. 

Preheat oven to 450 degrees.
Rub mustard evenly over medallions. Combine panko, parsley, thyme, salt & pepper. Dredge medallions in panko mixture.
Heat a large ovenproof skilled over medium-high heat. Add olive oil, swirl to coat the pan. Add pork, saute medallions about 2 minutes or until golden brown.
Turn pork. Place skillet in oven; bake at 450 degrees for about 8 minutes or until the pork reaches 145 degrees.
Let cool about 3 minutes and serve with your favorite vegetables!


Delicious entree in about 15 minutes, can't beat that!

Home Sweet Second Home

We are headed to Auburn this weekend! Chris & I both went to Auburn, as well as our parents and our siblings, so it is a very special place for our families. Every time I go back, it still feels like home.

We are going to celebrate my youngest brother's 20th birthday! I can't believe he is turning 20 this year! We go back to Auburn a lot, especially during the fall, but this will be the first time I have been back on a non football weekend in a long time and I can't wait! Here are some of my Auburn favorites:

Mad Men is back!

Season 5 of AMC's Mad Men premiers tonight and I am so excited! My mom has watched it from the beginning and had always told me I would love it, so when I saw that it was available for instant streaming on Netflix, we started watching it and Chris & I were both hooked! Welcome back, Don Draper!

Happy Spring!

It is officially spring!! I am loving the gorgeous weather we are having & the longer days. We can take Shugar for walks while it is still light outside and are able to get some outside projects done after work so we don't have to save them all for the weekend. I started pulling out my spring/summer wardrobe over the weekend since is seems the warm weather in Alabama is here to stay! This spring brings some special events for us; we will celebrate our first wedding anniversary in April and welcome our first niece in May!
